So I was watching Good Eats on the food network the other day, best show on that channel by the way, and he was doing a pepper special. The second recipe of the showw as a pepper pot pork chop.
- Start by brining the pork chops in vegetable stock, salt, brown sugar and pepper. Let it sit overnight.
- Next day put a bit of oil in a skillet and brown the pork chops on both sides (5 minuteseach) on medium high heat.
- Remove from heat and place on a cooling rack, put a little more oil in the pan andthen put 2 medium onions in the pan to sauté.
- Now in the slow cooker, place down a handful of dried apples, then place porkchops on top.
- Once the onions are done pour in a little over a cup of chicken broth over the onions and de-glaze the pan. Once it reaches a simmer remove from the heat and pour in the crock pot.
- Cook for 1:30on high, stirring occasionally
- Then turn the heat down to low and cook for 4:30 more.
Serve with rice and enjoy a great meal.
